Dark Green Leafy Vegetables

There has been a lot of focus on dark green leafy vegetables. Studies have come out showing that people who eat diets high in spinach, kale, bok choy, and other dark greens, have much lower incidents of hear attack, cancer, and stroke. There are also suggestions that it can improve your memory and aid in the prevention of Alzheimer’s and dementia and eyesight.

So, what are the most important dark green leafy vegetables? I would tell most people to focus on kale. There are others, of course. When I am making a green vegetable juice I will often add in parsley and spinach. But Kale is the superfood. I always make at least half of the juice Kale.

Kale is fantastic and it is one of the best dark green leafy vegetables for a whole bunch of reasons. First, it has many of the same benefits of spinach and you don’t have to eat or drink as much. Secondly, kale lasts longer. Spinach gets slimy. When you see slimy spinach you should toss it.

The importance of the dark leafy greens cannot be stressed enough. Everyone knows that berries are super healthy, but dark greens are just as important. There has been recent studies that suggest that Kale has properties that help in the repair of DNA. This is believed to be a very powerful aid in the fight against cancer.

One of the problems that you find with dark green leafy vegetables is that it can be difficult to get enough of them into your diet. Who wants to sit down and eat two cups of raw kale? Not many people. If you cook the Kale you are going to destroy a lot of the healthy benefits.  This is why I like to juice leafy greens.

Kale, Spinach and Parsley are the top three dark leafy greens I juice. I only add a small amount of parsley, but I do add it. You don’t want to drink a cup of parsley juice because it is a diuretic. I always recommend adding a handful to a juice.

Dark Green leafy Vegetables are very high in calcium. If you are a vegetarian or a vegan, then this is super important. You might have heard people claim that you will be deficient in calcium unless you eat dairy. This is not true. Kale has a lot of calcium. In fact, calcium is much more absorbable for many people when they get it through vegetables. Dairy can be difficult to process even for people who are not lactose intolerant.
